We have been approached by a business that would like to use a Panini griddle for warming of sandwiches, as well as cooking crepes on a round flat top griddle. Has anyone had any experience with these types of businesses? And if so, did you require exhaust hoods?
We are of the opinion that as long as the Panini griddle is just used for warming, then a type II hood is sufficient. However, on the griddle used for cooking crepes, we are considering it a medium duty appliance with a Type I hood required.
